Fill the water-pan about half full of water... sprinkle some wood chips around the water-pan...toss some coals around the bottom ring... some on the top... and "Badda Bing... I received this for Father's day one year ago. It is solid, stainless steel and after a year of sitting out on a deck uncovered, shows not signs of wear, rust or loosening. As for cooking, the booklet that comes with it has a bunch of times for various cuts and sizes of meat and the booklet is right on. You can add wood chips and it does produce some smoke flavor, but not as much as a traditional smoker or even slow cooking on the grill. However, the meat cooks very fast and has always been very tender and moist. You can also put liquid (beer, water) in the drip pan and create a steam effect. Overall, this is a very solid, well built product, that cooks meat very well, is really easy to use but has limited smoke flavor. ALso, it does use quite a bit of charcoal, but you do not need to use 100% pre-soaked briquets as it states, you can mix in normal briquets to save some $.

I purchased this cooker the day before Mother's day for a picnic in the park with family. I had read alot about the quick cook times and thought this would be perfect since we were spending the day. I could put the food on when we first got there and it should be ready for an early dinner. Now my main thing is bbq smoking. My family loves the taste of smoking BBQ. Everything read online said this thing could provide that great taste with fast cook times. Well that isn't exactly true. I put this thing together and burned the unit in Saturday nite. I rubbed 5 racks of babbyback ribs and a beef brisket to cook Sunday. BTW a whole bag of Instant light charcoal is excessive. We get to the park, I start this thing cooking placing hickory wood chips between the drip pan and the inner wall of the cooking cylinder as the manufacturer directs. I dump another entire bag of instant light charcoal in the outer ring and 12 pieces of charcoal in the upper ring. 3 hours later I pull the meat and I must admit it was all well cooked, juicy, tender and SMOKELESS! Neither I nor anyone in family could taste any smoke flavor in the meat. Bummer since that is what I was buying it for. I effectively cleaned it out this morning and will be returning it to Home Depot today. The Orion Cooker is a really good outdoor cooker and if you use it to roast meat it is a definite winner. But if you are like me looking for that great deep pit smoked BBQ look a little further than the Orion.

Finally, someone has built a "better mousetrap" when it comes to outdoor cooking (smoker/bbq). I first heard about this via an article in Popular Mechanics in 2007. I had to try it for myself - it sounded too good to be true. It really does work, and it's terrific. Now I am NOT a hard core bbq/smoker cook, just a casual outdoor cookout is my speed. This cooker works by creating a hot convection current inside the cooker. Understand that since the meat does not come into direct contact with heat/flames, the meat is cooked in a moist environment and will not have crisp (burned)exteriors. If you desire that, you can always remove the meat from the Orion cooker a little early and then throw it onto the grill for a few moments to crisp the outside. Meat cooks unbelievably fast in this cooker - about 1 hour for a whole chicken, 45 mins for a tri-tip roast, 1.5 hours for a 14lb turkey. It is so easy to use too - you just put the meat on the racks inside and close the lid - no flipping, turning or checking on it - mfr recommends that you do NOT open the lid to peek until the cooking time is up. Talk about "set it and forget it"! You can sprinkle a handful of oak, mesquite, or hikory wood chips inside with the meat for an amazing smoked flavor that tases like it was in a wood smoker for days. Have not made ribs yet, but heard that they come out so moist and tender that they almost fall off the bone. [...] The cooker is very easy to clean too. The cooking racks and drip pan are high quality and can be put into the dishwasher. Just wipe down the inside of the cooker+lid (mostly just waster condensation) and you're ready to go again. If you want to see one before you buy it, home depot carries them. These are pretty big (about 3' high) and built very sturdy. Orion has first rate customer service, call them with any questions/concerns. This is the BEST outdoor cooking product that I have ever owned in my life!

With family holidays approaching and a desire for me to feed them without spending 4 days chained to the oven, I purchased one of these suckers. It was easy to assemble, thankfully - normally, my assembly processes are fueled by profanity, bruised appendages, and eventually, whiskey. I had this up and running in about 15 minutes, though. My first attempt was to really put it through it's paces, with one of the mroe difficult cuts of meat to get right - a beef brisket. Worse, it was a cheap beef brisket bought from a grocery, trimmed of fat, a little on the small side, and generally not the kind I normally get before I BBQ things. I gave it a quick rub, put it on the grate, put the top on, and proceeded to light the charcoal. I adjusted the cooking time by proportionality - the instruction booklet lists 5lb and 12lb briskets, I only had a 3lb - sat back, and waited. A little over an hour later, it was done. At first, I was concerned that it lacked the smokiness I had come to love about a good BBQ brisket. I had loaded the thing with hickory chips after all. I realized that the main difference was that with my normal smoker, enough smoke leaks out that the whole neighborhood can smell smouldering wood, whereas with this thing, it's pretty sealed up. Once I got up close and personal with the meat, it did have a fair amount of smoke flavor and aroma, although not as much as when I actually use my smoker (although I didn't smoke my clothes, hair, and nostrils in the process). The meat was tender. Not quite the falling-apart, oh-my-god tender a good 12 hours in a low smoker can get you, but it was good enough for some brisket sandwiches and I simply can't argue with the fact that it was done in an hour. Didn't quite get the nice crust on the outside that a dry smoke will give either, but even with my smoker I've never quite gotten that right. I figured that giving it a small, overly lean, underseasoned brisket would be a pretty rough test on the new cooker - a good rub hides a multitude of sins, and a good fatty brisket isn't as apt to dry out - and the Orion performed admirably. As mentioned, it wasn't the best brisket I'd ever had, but for an hour of my evening and no constant checking and flipping, I'm well-impressed. On the downside, it pretty much requires an entire bag of charcoal per run, which can add up after a while. I don't intend to use this for day-to-day grilling, though, so this won't be as much of a problem. I'm excited to try it out on poultry, which should be an easier task.
